Fried Rice with Mixed Vegetables

A quick and colorful way to use leftover rice.

Ingredientes

  • 3 cloves of garlic

  • 1 onion

  • 1 can of mixed vegetables (low sodium)

  • 2 eggs

  • 2 tablespoons canola oil

  • 2 cups rice (cooked)

  • 1 tablespoon low-sodium soy sauce

Preparación

  1. Peel and mince garlic. Then peel and dice the onion. Set both aside.

  2. Open and strain the contents of the mixed vegetables. Rinse gently with cool water, set aside.

  3. Crack the eggs in a bowl and whisk.

  4. Heat a large pan with 2 tablespoons of oil over medium heat and saute the onions. Then add in the garlic and saute for about 1 minute.

  5. Add the cooked rice to the pan and then the eggs. Stir the mixture while the eggs cook with a wooden spoon. 

  6. Add in the mixed veggies, stir, then add the soy sauce and cook for another 2-5 minutes.

  7. Plate and enjoy!
