Cheddar and Greens Quesadillas

A crispy, cheesy way to sneak in leafy greens.

Ingredientes

  • 4 small flour tortillas

  • 1 bunch kale, chopped

  • ½ cup canned diced tomatoes, no salt added, juice reserved

  • ½ cup cheddar cheese, shredded

  • 2 tablespoons oil

  • 2 teaspoons chili powder

Preparación

  1. Heat 1 tablespoon of oil and heat a skillet over medium heat. When the oil is hot, add the tomatoes, kale, chili powder, and a little bit of juice from the can of tomatoes. Cover the pan and cook for 10 minutes until the greens become tender, adding more juice if needed. Then, add the greens to a separate bowl and wipe the pan. 

  2. Place the greens on half of each tortilla and sprinkle with cheese. Then fold in half.

  3. Heat the oil over medium heat and place the quesadillas in the pan. Cook for 4 minutes or until golden brown. Flip and cook for 3 more minutes. Enjoy!
