About the Recipe

A nutritious spin on a comfort-food favorite.

Ingredients

For Chili:

  • 1 teaspoon olive oil

  • 400-500g beef mince

  • 1 finely chopped onion

  • 2 garlic cloves, crushed

  • 2 teaspoons chipotle paste 

  • 1 tablespoon cider vinegar 

  • 400g can black beans, drained not rinsed

  • 400g can chopped tomato

Other:

  • 300g Brown Rice

  • 4-6 wholemeal tortilla wrap 

Optional Toppings: 

  • Grated Cheese

Preparation

  1. Heat oil in a frying pan over medium heat and add in the mince. Fry for 15-20 mins. Break up the meat with a wooden spoon until fly cooked. Stir in the onion and cook for another 10 minutes, then add the garlic, chipotle paste, vinegar, spice mix, and cook for 1 minute. 

  2. Add in beans and tomatoes and let it simmer, uncovered, for 20 minutes until thickened. 

  3. Meanwhile, put the rice in a medium saucepan with 600 ml of cold water and a pinch of salt. Bring to a boil, then turn the heat on low, cover, and gently simmer for about 20 minutes until water has been absorbed. Turn off the heat and leave for another 10 minutes.

  4. Wrap everything up tight, top with cheddar cheese, and serve!
